Neither are all that great, when you look at the big picture. I'd be shocked if any of the places he tried in New Orleans score above a mid-7

actually it was six

And to be fair, I grew up in the northeast and if there's anything I know about, it's good pizza. Nothing I've had in New Orleans comes anywhere close to even the mediocre pies I've had in NY.

I agree with you but Brooklyn Pizza in their early days was pretty legit.

can you give some detail about why that is? oven, dough, ingredients .. making a decent pizza is not that hard. Not sure why all pizza in Nola is shite.

NOLA has installed some crazy system to mimic the NYC water. The dough is 'chewy' like NYC dough.

Remember Omar from Roma Pizza in Pville saying that the water was the key. He did some tricks to add minerals or something.
