1/2 cup soy sauce
1/4 cup mirin
2 TBS grated ginger
2 TBS grated garlic
1-TBS light brown sugar
Juice of a lime
1-serrano pepper sliced with a thin slit top to bottom so as not to get seeds in sauce.
1/4 cup water

Bring to a boil and let cool. Discard pepper and marinate.

It only takes like 5 to 10 minutes to marinade. Any excess can be boiled again and used as a sauce.

Mine is similar. Instead of ginger and brown sugar, I use 5 spice powder. You don’t need a lot. 1/4 teaspoon per pound is plenty.
