Cooking down okra----AGAIN

The last 3 days saw me picking right at 250 pods of okra and I got to slicing them in order to smother it down to put in the freezer for soups and gumbos.
Amazingly, out of all that okra I only had 3 pods too tough to use and tossed them in the compost pail.
There's a 4 gallon pot damn near filled to the top of cut up okra smothering down on the stove on a low simmer. That should take about 4 hours to finish to my liking before I let it cool to bag up and toss in the freezer.
The rest of any okra I pick before pulling the plants will be given out to family and friends since I've already got about 5 gallons of it already in the freezer, plus what I will wind up with today.

Good enough for me since when I use it in soups and gumbos it will cook down at least 2-3 hours more once in the pot at the onset.

Do yourself a big favor and ditch the stove.... cook down in the oven. No risk of scorching and a lot less stirring.

I've always cooked my okra down on the stove and have never had it scorch. Low and slow with a heat diffuser between the fire and the bottom of the pot really helps with keeping the heat more even on the bottom of the pot. I give it a stir about every half hour or so just to turn it over so it gets cooked evenly.
