There’s a zillion of them when you google. Just wondering if anyone has a favorite.
No chocolate. That’s an abomination.

Here's the ingredients I use in mine.
Stale French bread cut up in cubes
1 can of condensed milk
Whole milk
Eggs
Cinnamon
Vanilla Extract
1 can Fruit Cocktail drained
1/2 small can of pineapple chunks
Chopped Pecans
Raisins
Mix together the condensed milk, whole milk and eggs and pour over the cubed bread and let that soak until the liquid is absorbed. Then I like to break up the bread a bit more so there's no large chunks.
Add the other ingredients and mix well. Grease a suitable size baking dish with butter, pour the mixture in and bake at 350 until a light crust forms on top.
After that, it's up to you if you want to make a sauce to go with it.

The wife is working on one right now. Don't know that I'd call it simple and it's the first time we're trying it.
Leek & Mushroom Bread Pudding
Substituting sage breakfast sausage for the pancetta.

I will save this. Never tried a savory BP.

Try Paula Deen's donut bread pudding recipe, but sub half cake donuts over glazed and light fruit cocktail. It will put you in a coma, but it's damn good.

Leidenheimer poboy bread makes the best bread pudding.
You only need cinnamon and Suger. Leave all the fruit and chocolate out.
Break bread into chunks, put in pan.
PET milk
Egg yolks
Sugar cinnamon.
Whisk together and pour over bread. Pat bread down until completely submerged/soaked through.
Bake covered until firm, uncover and drizzle margarine over top and bake until the top browns.
Only measurements I have are for full pans (about 24 servings). If I halve them, you'll get:
6 cans pet milk
10 eggs
1 cup sugar
Cinnamon to taste (aka eyeball)
Bread is however much it takes to fill your pan.
Simple recipe.
Whiskey/rum sauce:
1 quart heavy cream
1 cup white sugar
1 cup brown sugar
1 tsp vanilla ( honestly just a guess. Eyeball/to taste this as well)
6 egg yolk
Rum/whiskey to taste)
Whisk and enjoy.

Not criticizing the fruit cocktail... I have had it and it is good.. But I have had it with golden raisins and plenty of pecans... Absolutely delicious...

Swap the french bread in these recipes with Hawaiian rolls. Tear them up, put them on a pan and crisp them up in the oven to dry them. Much better!

I’d dial up the seasonings next time but I prefer flavor bombs to subtleness. That said, it was so much better than dressing or stuffing. Crusty layer with a juicy layer underneath.
