boiling crabs

Just boiled crabs for the second time. Both times the claws pulled out without meat on them, am I cooking to long. Any good cooking practices I can try?

Steam them over a mix of vinegar and water for 30 minutes. Layer your crabs with a healthy dose of kosher salt and Old Bay (Wye River also works). Serve with drawn butter. Your claws will be perfect.

Boil them for 12 min, let soak for 40 perfect every time!

Ok, so I might get crucified for this. But if you take properly steamed blue crabs with old bay and properly boiled crabs and put them next to each other. I would choose the steamed crabs. It is a better method to cook the crabs. Sorry. I still love boiled crabs as well though

In a large crab steamer. The water rolls in the bottom container and the steams through the holes in the bottom of the top container. You can hold about half to 3/4 a bushel.

Might help if you cool the crabs with ice for a couple of hours before boiling. Also I agree with 12 minutes boil soak 40 minutes. Try adding some chack bay boil to your crabs, that makes them things goooooodd!!!!

an "active" crab has several defense mechanisms. one such mechanism is to release all or some of its claws when endangered. an "active" crab will do this when it hits the hot water.

you need to induce a state of dormancy in the crab. this can be accomplished by icing the crabs for an hour just before cooking.
