Roma Tomatoes

I have about 15 ripe romas that I need to do something with tonight.

Any suggestions?

I think they're best roasted. Roast with some garlic and add to some angel hair pasta with your favorite herbs and cheese.

They also go well on pizzas

Pretty easy to utilize in salads..

i like to do stuffed roma tomatoes.

cut the tomatoes in half and scoop out the pulp. put the pulp in a bowl with herbs (basil, oregano, green onions, parsley..whatever you like), olive oil, parmesan cheese, and bread crumbs (i use panko). mix well and put a heaping spoonful in each tomato half.

top with a little salt/pepper and drizzle with a little more olive oil. bake in oven at 375 for about 20 minutes.

tomato gravy...you can freeze it and use it anytime....or just make some tomato sauce and save it.

I love romas and I love to make a roma/mozzarella salad with olive oil, balsamic vinegar, basil, and salt and pepper. Delish.

sun dried tomatoes!!!! easy to make, easy to store, stay good for a long time. and man they are tasty.
