Whats the best way to cook it?

I had venison cooked sous vide a few weeks ago...takes a lot of patience, but it really does the trick.

How do you cook it? Thanks man

season and stuff the roast with garlic. put thin layer of cooking oil in the pot so that meat doesn't stick. brown the shite out of the roast on all sides. take out of pot. add diced onions (and bell peppers if you like) along with pork sausage. brown the shite out of that. put roast back into pot. add water. flip roast every 30 min. until it is tender. let water boil down until gravy is at desired thickness. serve over rice.

Assuming there's plenty of meat, I'd say cook the roast in a traditional way (like the recipe above), and then just try to cook some extras sous vide ('cause it looks a bit challenging).
But here's a couple of different ways to try it:
Venison Sous Vide
Venison Is Better Than $aban

Would you use a roasting bag for Sous Vide?

If I remember right, I think any good ol' plastic pouch will work, as long it's sealed well...

Last year I received the After The Hunt Cookbook and there are more venison recipes in that book that you will ever use. My new two favorite recipes in this book are the Rolled Venison Roast recipe and the 40 Clove Garlic Venison Roast recipe, they are both incrediable. I cooked both of them at my camp for friends and they continue to rave. Get the book it is all about game and great reading.
