Don't know why you'd make that assumption, or if you actually even believe that and are just trying to rile up your fighting buddies on here. I can't ever tell. Emeril is literally the king of that shite, as I'm sure you know, and his restaurants here haven't fallen off at all. FWIW I haven't watched FN in probably 2 years, and I have no intention of watching this show either.

hasn't emeril been a TV guy for all but 1 or 2 years of his restaurant owning career? he might be a unique guy that can handle it.
there were reports of a serious dip at La Provence an Besh had to go spend more time up there to work it out. Just wonder if he is spreading himself too thin.
Hell, Les Halles in NYC dipped in quality for a while. Not many people are immune.

As far as I know, the only restaurant he ever cooks at on a regular basis is August. I don't know how the other places could go downhill by virtue of him leaving, if he's rarely cooking there to begin with. He's trained several chefs, and they're obviously holding their own right now. The guy clearly knows how to run his business, on a restaurant level and on an enterprise level. I think your presumption is that he cares more about his celebrity than he does about his food, and I would entertain the thought if it wasn't coming from you. I enjoy your view on most things, and particularly food, but damn, you're like poliboard-level hackish when it comes to anything even tangentially related to NOLA. Just seems like so much effort expended to rile up like two or three guys.

look at the post above yours. some say august suffered. too bad you dismiss possible truths so easily.
i just find besh annoying and uninteresting. now i would watch a show with boswell or link.

I enjoy Besh just wish he would be happy being in NOLA and not looking for the big spot light(let the big boys come to him)....call me crazy but Id much rather John Folse be the face of Louisiana cuisine on national tv than Besh. Plus Folse needs the $$$

Really? Then re-read my post and see where I said he doesn't cook at every where but August. So clearly, the restaurant that he does cook at, would be the one that could suffer, and the rest of them would continue on with little or no change. It's not that hard to grasp the concept I'm putting forward here. I only responded to this thread in the first place, because I knew that the only reason you started it was so you could explicitly state that you thought his restaurants would suffer. Sure enough, as night turns to day, that's what you did.

i kind of agree that if you're a guy that already has 6 restaurants and just did a cookbook, i'm not sure if spreading yourself any thinner really matters.
Also note he's doing a TLC show about helping people cook, and another normal cooking show on PBS based on his cookbook.
There aren't a lot of legit cooking shows any more, so I'd be interested in watching.

the pbs one might be good as are most cooking shows on pbs. the tlc one will prob be as annoying as that show where that pretty boy aussie chef flirted with women while cooking for her husband.

I like to see all of them but I will say John Folse is a great ambassador for Louisiana food as is Paul Prudhomme.

First time I saw Emeril was on the old Great Chef's series. He did a crawfish/crab boil with Julia Child when he was chef at Commander's. He looked like he was twelve and about a hundred and thirty pounds. It was a long time ago but I remember thinking this guy is good. And he has proven he is.
Besh is a great chef and has TV looks and personality. I enjoy his restaurants and I would think he will do well with his show. Yet another Louisiana plug and you can never have too many of them.

fizzle...quality control at this point more than likely comes from his training
of chefs and his mere presence or threat of him popping in. i doubt his actual cooking is the difference any more.
if he is away for long periods there is a chance that the mice will play....not just at August.

Those were fantastic. Better and more informative than anything Food Network's ever put out.
I remember an amazing one with Antoines doing a pressed duck, using this gigantic solid sterling silver duck press contraption.
