Homemade oven fries/chips

I recently started making them again, and I tell you what, they are pretty damn awesome, and super easy.

I concur...It's hard to beat homemade fried taters.

I don't have an exact recipe, but you can't really screw it up. This turned out to be lengthy, but after doing it once, you'll see it really takes nothing at all. Here is what I do for the fries:
Have the oven pre-heating so it will be done hen you are finished with the potatoes; you don't want them sitting out in the air too long; I mess around with the temperatures alot just to try different ways and often I have different size potato pieces; for steak size pieces, 400 degrees works well
Prepare a potato (or more) like you normally would, wash/scrub, blah blah
Cut it any way you like, trying to get uniform shapes and sizes; shapes don't really matter as long as the general size is the same; you don't want big long fries in there with small ones because the small ones will cook before the other ones; pretty common sensical stuff here
Put the pieces in a ziplock bag and add a little bit of olive oil (VOO, EVOO, any kind you want), just enough to coat the pieces, and seal it and shake it up; I've heard some people use peanut oil or canola oil, but I stay away from those and stick with the "healthy" stuff
After a good shake, dump then i a regular baking pan; I put foil down and spray with PAM to make easy cleanup; space them out so none are on top of each other;
Put them in the oven for 40-50 minutes; halfway, you should turn them over to get the other side crispy; since I do different sizes and mess with the temperature and times alot, I'll check on them every 5 minutes or so just to see what's going on; if the undersides are starting to get too brown, flip them before the halfway point, etc.; basic common sense cooking stuff

For the fries, I wash, cut 'em up and drop 'em in the fryer. After they are cooked to perfection (I like my crispy on the outside and chewy on the inside) sprinkle with the seasoning of your choice: Salt/pepper or try Tony's.
For chips, I slice the taters paper thin and drop 'em in the fryer and follow the same routine as I do the fries. Fry until crispy, then season. On the chips you can even use a little garlic powder or dill if you like. Use any seasoning you like.

I bet these might taste a LITTLE better, but I try to avoid frying. The oven method really is pretty damn good, and not bad for you.

This thread has successfully made me extremely hungry...
This may be a really stupid question, but how do you guys store these? Do you only make enough for what you want to eat at the moment or can you just put them in the fridge and then put them back in the oven later? What do you recommend for the most delicious results?

I usually just do a medium sized potato when I cook them and eat them with a piece of chicken or something. It takes 2 minutes to cut the potato, and the rest of the time is them in the oven, so you can go watch tv or cook whatever else you are cooking. I've never stored them overnight before, but I would assume they come out the same as any fries you would get somewhere and use the next day.
Obviously there are ways to make them taste better, but I try to cook as healthily as possible. I would guess using more oil, a different kind of oil, putting butter in your pan, putting butter on the raw pieces, etc.
You can also experiment with different things like cheese while they are in the oven. If you aren't worried about eating right, the options are many.
