Pretty much all of that fish is flash frozen at sea. Indeed, it will keep you from getting ill.

FWIW I ended up ordering what may well have been the worst French Onion Soup I've ever eaten.

not all fish is flash frozen.
but ALL fish IS, at least, iced down for the trip in.

eta: especially "catch of the day"...shouldnt have been frozen in my opinion.

In some restaurants "Catch of the Day" is used in the same context as "Fish of the Day"

Whole Foods on Magazine Street has a sign saying " All of our fish has been previously flash frozen."

Unless I buy it off a boat I always assume it has been frozen. I would certainly rather it flash frozen if I cannot have it completely fresh. I really dont buy fish that much though I catch most of what I do cook.

So then why would I not just buy the frozen stuff that they package that is like 4 dollars less a pound?

If you know its from the same source as the stuff in the display case, then by all means get the still-frozen stuff. As has been noted, the stuff in the freezer case is often lesser-quality fish.

Because flash freezing is actually a great way to preserve fish.

If its the EXACT same and thats a big if.. Then there is always the convenience factor of not having to wait for it to thaw and you can cook it that night.
