Pick my tailgating menu for A&M

Yeah it's a couple weeks away, but I am bored and actually need to start planning it. It will be paid for and not on my dime, thus the need for menu/price planning. Needs to be almost "showy". The person paying has his bosses/clients/coworkers and such coming and he wants us to make it good. So far I am pretty set on doing a sauce picante and cochon de lait. Any other ideas?

because it's the last home game and prolly will be cold as shite, i'd go with a good ole gumbo.

I was hoping the sauce picante could take the place of the gumbo. I did it for Florida and kinda wanted to do something different. Havent done a sauce picante yet

We will be having a throwdown at our house for friends, etc. Will probably do a gumbo, and smoked pork butt. Pray for me, my wife is an Aggie

That should be plenty. I'd throw some different sausages in with the pig to break out as apps.

Well we normally have anywhere from about 100-150 come through the tailgate. And this being A&M Im expecting it to be more. Dont feed them all obviously but ideas in bulk are what im looking for

Example: couple games ago I did 2 batches of jambalaya in my 10 gallon cast iron pot

Make 'em. Get the boudin formed when it's cold. Put the stick in them. Coat in cornmeal batter. Fry. Done. Just a boudin ball on a stick.
