Carrots In Gumbo

I’m traveling from Mobile on my way to Lafayette to see a customer in the morning. One of my coworkers lives in Covington and asked me to stop by and look at a yard project he has going on. His wife is from Broussard I believe and offered me a bowl of gumbo. So I sit down and eat with them and at first I thought the gumbo had small diced up tomatoes in it, but I kept looking at it closer, and it had tiny pieces of carrot in it. Her chicken and sausage gumbo was pretty good. I’m almost 49 years old, grew up in Louisiana, and I’ve never in my life had carrots in my gumbo. My question is this. Has anyone else had carrots in their gumbo?

I went to Zeeland Street once and the gumbo looked like Campbell’s gumbo straight out of can with little carrot tidbits, with some slices of sausage thrown on top. Needless to say I’ve never been back.

Sure it wasn’t a chicken/hen fricasse? I put carrot, potatoes, sometimes turnips in my fricasse. If it was gumbo, nope never heard of that.

No. I’m positive. It was dark roux gumbo with quality sausage, chicken and okra. And very small pieces of diced up carrots. You wouldn’t have even noticed them had they not been so orange. All I can come up with is she put some tomatoes in too and used the carrots to cut the acidity down. That’s a reach but that’s all I can come up with other then maybe she just likes carrots.

My friends grandmother would make gumbo with turnip and mustard greens when we were kids. But she didn’t put carrots or tomatoes in it.

I can only imagine on the brisket thread. I smoked one of those Saturday and my neighbor poured ketchup all over his brisket. Does the same to his steaks.

Were there bell peppers in it too or it was the traditional mirepoix instead of the trinity?

That’s what I’m thinking. Obviously mirepoix isn’t us, but I’d allow it.

I’ve seen some REAL SCREWED shite on the internet parading as gumbo or jambalaya. It has lowered my tolerance threshold.

Just the traditional trinity and carrots. Had the carrots been left out it would have looked like the normal bowl of dark roux based gumbo I see in the Lafayette area. I’ve seen people add potato salad to the top of their gumbo at the table. I’ve yet to try that. But I’ve never seen gumbo with carrots in it.

No I have not seen corn in gumbo nor carrots until yesterday. I broke down and asked my coworker why his wife puts carrots in her gumbo and he said she puts a few fresh tomatoes and a carrot in the food processor and the carrots add a sweeter taste and cuts the acidity of the tomatoes. He’s from New Orleans and likes tomatoes in his gumbo. She’s from Broussard and does not like tomatoes period so she purées the things up so she doesn’t see them. Oh well the gumbo was good but looked odd with specs of orange floating around in it.

I don’t put carrots or tomatoes in my gumbo but if you want to, go ahead. It will still taste just as good if not better than anybody else in here who disagrees with you gumbo
