Any tips from folks who have been would be appreciated!

Mamas Fish House on Maui is incredible. Great food and a view that is second to none.

Hike to the crater of the volcano one morning. Make sure to bring water and hiking shoes.

We downloaded a virtual tour guide for the Road to Hanna and it was great. It gave a bunch of not well known spots to hike, swim holes, cliff jumps, caves, banana bread stops. I'd plan to spend a whole day doing that.

Road to Hanna

Stop and watch the surfers on the north side by Ho'okipa beach. There is a lookout that takes you almost parallel to the surfers. The day we were there it had 20+' waves rolling in. to see the power of those waves up close is impressive.

That Lanai Four Seasons is supposed to be dope - sounds like a great time. I don't know about Lania excursions, but here's info for Maui that I enjoyed...

For hikes, Waihe’e Ridge Trail on the western side of Maui. Spectacular mountain views of the valley, rainforests, etc. It's not a walk in the park, but is manageable. My wife and I spent our honeymoon in Maui and spent a half day driving the Kahekili Highway making various stops along the way. That is one of the dangerous and craziest drives I've ever done. Waihe’e Ridge Trail is towards the tail end of the highway

Road to Hana requires a full day absolute minimum starting at sunrise to beat the buses/crowds, if you want to see it all, which is still difficult in itself. It's a wonderful experience, but sounds like your limited for time in Maui.

Haleakala National Park could also use a full day, but you can do a morning tour or half day if you simply drive up and see sunrise. This requires a very early wake up and start - around 3-4am. After watching the sunrise, we hiked a 4 miles to the bottom of the crater which was very serene. It felt like and looked like another planet.

Mama's Fish House is as advertised. I also enjoyed Maui Brewing - Lahaina for lunch.

We also did a more private snorkel/whale watching trip on an inflatable boat through Captain Steve's Rafting out of Lahaina. Wonderful trip and more private experience than the big boats, maybe 12 people max. Lanai may have a similar option. One of the guides was a whale nerd and we spent about 45 minutes luring whales near the boat getting some nice encounters. FYI, December should be decent time for whale watching as that is leading into high season.

The road to Hana has some spectacular views. However if you get impatient with traffic, very slow driving or are prone to getting car sick I would not do it. I did it once and I have all three problems I mentioned. I won't do it again.

Haleakala Crater Hike Here's info on NPS website for hiking the crater as well. I did not do the big 11 miler, but hiked a few miles to the crater bottom from the visitor center. It gets hot, is extremely dry, along with rather high-elevation at 10k'. Bring more water than you think. Even being 50-60 degrees on my hike, it felt much warmer.

Crater is essentially void of all life, except for silverswords. I've never experienced a quieter place in my travels.
