Anyone make cheese here?

Over the weekend with some time to kill, I made some cheese. Nothing too elaborate but we had a gallon of whole milk about to go bad in a day or too. So, I decided to make some cottage/farmer's cheese. Cooked it up to 190 degrees, added a half cup of vinegar. Let it separate for about 30 minutes.

It was ok but I found I had to add a lot of salt to give it some flavor. Packed the curds tight into a plastic container over night. Left it on the counter. Early this morning I put it in the refrigerator. Just now opened it and voila, fricking great cottage cheese essentially.

Over the next week while on Christmas vacation, I plan on making a lot more but using some organic milk from Sprouts or some place. Maybe adding a culture and letting some of it sit.

This is about what it tastes like but not the same form though. I want to give that a try as I like to put big slices of fresh mozzarella on homemade pizza.

I'll have to look into that.

Eventually, I'd like to make my favorites:

Feta
Red Leister
Cheddar
Moz.
etc.

Man it's fun to make your own stuff.

I've made ricotta cheese a few times using raw milk. Came out so much better than store bought ricotta.

I made mozzarella once Came out good. Lotsa effort and about the same costs as just buying it

I get the feeling with cheese, you just have to like making it. It's not quite cost effective.
