Chili recipe starts with my brisket which recipe Im not sharing. Is literally Beef stock, cubed left over brisket, onions, tomatoes, toasted chili powder. I thickened it with potato starch if needed. Control the heat with black, red pepper

Hi, Robert. Based off of what experience? You actually competed at Hogs one year, how'd you do? Most guys on the pro level of competition started out smoking for years using the traditional methods. Myself bbq'd the traditional way for over 9 years (and still doing it) before I ever competed, and now going into my 13th year of competing for a total of 22 years of bbq. The meats that we're using at competitions are far superior to restaurant quality meats and ingredients, much less festival food.

Listen, unlike you, I'm a very humble and modest person. I actually let my experience (22 vs your 5 on and off), and real accomplishments speak for themselves. I sure am, come see me. I'm taking small steps in retraining the staff. A lot of old, poor techniques needed to be cleaned up. I'll actually start cooking soon. This hashtag yielding clown can talk all he wants, but I know the real truth about him.
