The secrets of the restaurant business sorry to awoke ya. As soon as I could afford too and had room at CCBBQ I did and the quality dropped IMHO. Sometimes other people do it better. Everything else we did was from scratch. No Sweet baby rays like i saw some Hogs teams using lmbbqao

34 years cooking. BBQ professionally for 7 of that. Was KPauls Ex Sous Chef before I started popups. I forgot more about kitchens than you will ever know BTW Chef BTW

TBH it was a way to salt the inside of the brisket after slicing. I did no injections.

I got my complaints from people that didn't understand it, but it was my food so I thought the cost was worth. I didn't have to answer to the man and bow down. Felt good man! It was all about the FOOD
