heypaul ... your picture has it open with toothpicks in the pork ... do you wrap it completely & just let the toothpicks keep the foil from sticking?

Also, I have a whole pork loin ... what did you use??? I don't know tha tbacon would fit around the loin that I have.

HELP -- that looks SO YUMMY!!!

it's wrapped lossley around the toothpicks for the first couple hours then the last hour you take the toothpicks out and wrap the foil tight.


For something big you want to have a basic rub.
(use the spices you like)

do you want to smoke yours or grill it?

we always just do the bacon wrapped tenderloin with cream cheese and jalapenos in the center... i am going to try this caribbean/jerk sounding thing soon!

in the bottom of my smoker is a bowl of 50/50 water apple juice with diced onions....

but yeah the jerk spices give it a kick, so be careful

for now i actually do the tenderloins in the oven... i always plan to grill them but end up getting lazy or it rains...

i think my daddy is getting us a big green egg as another housewarming gift

we are going to turn into carnivores with that thing

Anyway, how long do you grill it? Or is it until a certain internal temp?
