have some in the oven. went to the farmer's market and got some pretty chops, and stuffed them with produce from the market.

chopped some apples, a jalapeno, half a shallot, clove of garlic, 2 canned chipotle peppers. Light saute in butter, cinnamon, honey, and dash of chili powder.

stuffed chops, seared, finish in oven.

ended up making a glaze with water, brown sugar, honey, and adobo sauce. Also, candied some pecans with cinnamon, butter, brown sugar, and chili powder. Rested the chop on some excess apple/jalapeno/shallot/garlic stuffing.

Served with some roasted summer squash and some shitake mushrooms.

yes, the plate is sloppy. i know. i was drinking.

to be fair, i went to the farmers market today and bought all of the produce with the intention of doing something with the pork. I love latin flavors so i keep chipotles in adobo on hand at all times.
