who in the frick posted that zilla ?? must have been at the tail end of the long pork chop thread ... shite, chicken just doesn't want people advertising their businesses for free on here when he is trying to generate advertising revenue with people legitimately paying to advertise their businesses on here ... why is this so hard for people to comprehend ?

most people can't use them in moderation and the overpower. I like to balance their smoke and heat with a little sweet.

Robert Rodriguez - 10 Minute Cooking School (Puerco Pibil)
If you've ever seen Once Upon a Time in Mexico, Depp's character is obviously big on Puerco Pibil (aka Cochinita Pibil). One of the DVD extras is this great video of Robert Rodriguez preparing the dish. One of those things that you have to be around the house all day to make, I've only prepared it once.

Came out pretty good, it was in the oven all morning. If anything, I would have tried to make it a little less spicy, it was a bit more hot than I had anticipated. I suppose I'm more of a fan of Cuban/Caribbean style slow-roasted pork more so than Mexican style (but it's all good).

Rag, I appreciate what you are doing. It still kills me that there are business owners that continue to promote their places on here. I have a sales person whose livelihood depends on him selling advertising on here. These business owners are making his job a lot harder.

that's why i pointed it out ... was highly disappointed in the droves of posters that just couldn't comprehend what was wrong with this .. this site costs you guys money to operate and that overhead grows everyday .. basically the only way to generate revenue is online advertising ... these same people in that fricking thread defending the shite are the same people that would cry bloody murder if you had to start charging us $5 a month to be members of this site because your revenue stream was contaminated ... when opie undermined the TD crawfish boil for the other one, my respect dropped for him immensely in light of the fact that the guy to that point had gotten an insane amount of free advertising on here ...
people that just wake up in the morning and report to a job have no idea what it takes for guys like you to generate their paychecks, they still think money just grows out back on the trees in the garden and payroll just picks the checks off the branches ..

fwiw I know opie and that's not exactly how that went down. His original intent was for everyone to bring their own pots and share the different ways they boiled crawfish by the time it grew to opie being asked to cater it he had already booked the other gig kinda impossible for him to be 2 places at once

Fairly spicy, and it was definitely a fun experience to make. Per Robert's suggestion, you can include a few of the seeds from the peppers that you would typically take out, and that will give the dish some extra kick.
I enjoy foods with strong spices, but I'm not really a big fan of "hot" spicy (tabasco sauce and such).

never had much cuban or caribbean food what's the main difference between that and mexican food?

if that's how it went down, creole .. that would be understandable .. but he pimped muddy's tailgate before the TD one was officially called off .. it might have been on the up and up .. but when he did that it looked suspicious .. that's all ... it looked like he moved on to paying gigs (which would be understandable), but pimped muddy's and turned his back on TD .. for all we know, he got the gig off of the food and drink board ..
