Sorry...I know I'm late but here is my New years Cabbage rolls.
Stuffing...I use blackeyed pea Jam.
1 pound andouille, chopped
1/2 pound tasso, chopped
2 medium onions, chopped
1 stalk celery, chopped
2 pods garlic, minced
2 tablespoons butter
2 15oz canned black eyed peas
1 medium jalapeno, chopped
1 teaspoon cayenne
1/2 teaspoon salt
1 teaspoon white pepper
1/2 teaspoon black pepper
1 can rotel tomatoes
4 cups cooked rice
3 medium bay leaves
1 teaspoon Thyme leaves
Melt butter in skillet and brown meats. Stir in seasonings, rotel tomatoes, onion, celery, and garlic. Saute for 10 min..Add bay leaves, jalapeno, and peas. Simmer 30 min.. Add cooked rice and simmer 10 min..
Then I stuff the cabbage leaves and place in a pan with red gravy....into the oven it goes and "bam" you have cabbage pork and blackeyed peas all in one dish.

These stuffed cabbage/cabbage rolls recipes sound great...but, they are missing one key ingredient: sauerkraut.

Hmm, I've never had cabbage rolls w/ sauerkraut. Pierogi (another one of my favorite foods) as well as other Polish foods often have sauerkraut, but I've never seen the cabbage rolls (galobki) with it.
FWIW, in Houston there's a deli called Kenny & Ziggy's that has pretty good cabbage rolls.

We always visit Kenny and Ziggy's on any H-Town trip..much prefer it to Katz's on Westheimer.

Ground pork is a must in cabbage rolls. Use half ground pork, half ground beef.

I have family members that get an upset stomach with pork...else I would have included it.
