Indirectly, carrots have been in most of my gumbos.
I make my own chicken stock with chicken bones, giblets, a traditional mirepoix and black peppercorns. I of course, strain and reduce it before using it my gumbo the next day.

I gotta agree with this one—people put an amazing array of things in homemade gumbos. I’ve been served bowls (or seen recipes) including hard boiled eggs, spam, cut up hot dogs, chunks of bologna, black eyed peas and leftover chopped brisket, squid, diced turnips, chopped greens, etc.
Restaurants and cookbooks and those who learned to cook from restaurant cookbooks don’t own gumbo, home cooks do. People are way too hung up on gumbo rules; it’s a living, breathing food tradition that is full of family & personal variations.

To be clear, I've never put carrots in gumbo, but I won't fault someone on their homemade recipe for a dish with such humble origins. Within reason anyway.

Only thing I can think of is texture.. and maybe she just likes carrots with chicken. Historically when gumbo was originally made, they probably put anything they had available.

When I was in high school in Houston, went to some place in the Galleia that had "turkey gumbo" on the menus. I got it and it was a broth with carrots, peas and other such nonsense. As a brace faced teenager I complained to the manager who basically wasnt going to take crap from a Louisiana kid but that kind of made it funny and memorable.

Funny I dod my first miepoix yesterday. Decided that cheating on a demi glace with broth is a damn good gravy.
