Could I cook pastalaya day before eating?

A friend of mine has asked me to cook pastalaya in my 6.5 gallon pot for his wedding reception (no wedding, just reception)
My wife’s bday is the day before and she wants us to go out of town that weekend.
I hate to tell the guy no, because he’s helped me out many times. I’ve helped him out as well.
So if I make a huge batch of pastalaya a day or two before we go out of town. Is there a way for them to reheat it and it be good? We reheat leftovers in the microwave all the time but I’m talking about big pans of it.
Last resort would be getting my dad to cook it for them at the reception. The man can cook but he’s never made pastalaya, much less on this large of scale.

Cook it all the way till you add your pasta. Keep the base in the fridge till you ready to cook. Day of wedding wedding, add your liquid to the pot and bring it to a boil, pour in your base, let it simmer a few minutes then add your pasta. You only talking about a 30-40 minutes for that process and it will be better than reheating it in large pans.

I have cooked Pastalaya the day before. Placed in aluminum trays with lids (available at Sam’s). The next day, I added a small amount of water, loosened the lids and heated in the oven for about 20 - 25 minutes on 350. Stirred it a few times. It was great.
