I'm a light batter person. I can't stand seafood or other things with heavy batter. Takes away form the main ingredient, for my tastes. I like fried pickles without having to dip in anything. By the time you have a thick batter, covered in ranch, where in the heck is the pickle!

Sliced jalapenos are also great fried. Don't worry about the seeds. Cooking looses most of the heat. Dip in ranch or your favorite sauce.
