All of the above. Use a thermometer to make sure the oil is at least 350. If it's not quite hot enough, that's how you get soggy greasy fried food.
Also, use peanut oil. Other oils will impart their own flavor to the food. Peanut is the most neutral flavor.

Crawcane should be carried at your local Rouse’s and Piggly Wiggly/Lyon’s Mart. Probably some other places too. Think Kartchner’s has it.
