Surprised no one has mentioned Salmon. I grill that sometimes once a week. Always grill extra and make fish tacos the nest night.
And always grill w/ charcoal. If you are using a gas grill you might as well cook it in the oven.

No idea why this has taken so long to get mentioned. I've cooked this to people who would swear fish is the spawn of Satan and I've never once gotten anything outside of an outstanding review. Coat it with some butter, lemon and Tony's. Turn one side of the grill up real high and put them on the other side. Quick and easy dinner that is outstanding.
I really don't know why more restaurants don't serve this. It's got such a nice presentation in the shell and you can literally eat it with a spoon it's so tender.
