Check out gonzosmokehouse on insta. They do a brisket boudin that you might be interested in looking at. They don't get on your level of experimenting, but have some interesting dishes

Its too bad the Friday night isn't a separate ticket from Saturday (they're bundled for me) because I have 2 weekend passes and I'm not going to Friday night so I'd give them to you for free.
