sounds good to me!

but i want to try the black cast iron method, these are some good ideas

All sounds great. My favorite premixed steak seasoning is Tex Joy, from just down the road from you...but I go more to sea salt and fresh ground pepper on my good steaks. Sorry about the steer explanation, but with that big arse picture of Texas next to your name, I just couldn't pull back.
