As rare/blue as possible. And at a place like Ruth’s I’ll also make sure to get it on a cold plate so it doesn’t keep cooking.
I’ve had restaurants tell me that they can’t serve it as rare as I want. And I’ve also had more than one member of the kitchen staff come out and make sure that it wasn’t “too rare.”
