Well there is a good example then of adding pages to a cookbook and not serving it in the restaurant as she didnt serve a jambalaya with tomato in it at Enola's RIP.

When I order jambalaya I always ask if there is tomato in it first. Simple as that.
Doubt they would lie about it since they dont know if I have a food allergy.

Exactly. I think it's a marketing tool. I think cookbooks are written to market to other demographics. The Cajuns already know how to cook, so they cookbooks are written for the other folks who would normally use tomato in jambalaya.

They have to fill pages in cookbooks. If there was only 1 recipe there wouldnt be a need to buy more cookbooks

Yes, that story was so darn bizarre and my employee was this very prim and proper, totally grounded, staunch Catholic in her mid 50's. I don't think she committed a sin her entire life. Hearing that from her raised a question in my mind. She was freaking out because she was sure people would think both she and her husband had completely lost their minds. There was terror in her eyes.

You do realize there are two VERY BIG parts to this little equation. The first is that jambalaya is a SPANISH dish (see Paella, tomatoes are from the New World of Spain) and Louiiana history, but NOLA has no rice it is a SWLA product ths Cajun/French influence The juxtaposition is kind of interesting to consider.

Tomatoes are from South America. Domesticated by the Aztecs in Central America. Brought to Europe after Cortez conquered said Aztecs.
