You're not seriously trying to discount the cookbooks, are you?

I have checked 38 of my cookbooks and only 3 have no jambalaya recipes with tomato. I haven't even bothered with the N.O. cookbooks like Antoine's, Arnaud's, Austin Leslie's, New Orleans Cookbook, etc., because we already know that answer.

If you write a cookbook, you are staking your reputation on the quality and make up of its recipes. All these chefs and community organizations didn't care about that?

Man, give it up. It's OK that you didn't know jambalaya almost universally contains some form of tomato. It's OK not to like it, just don't make ridiculous claims about authenticity or what is "traditional".

Put down the crack pipe:

There are 20

Click on "Search"
Click on "More Search Options"
Then select "OT LOUNGE" in the SEARCH of FORUMS
Then type in "gris gris" on Search by Author

Stand back and watch all 20 appear. Its Magic

Dude... Spanish Inquisition already!

Have I not been saying that some people use tomato as a browning agent? Thats not the same as making a Red Jambalaya or Creole Jambalaya.

How many of those cookbooks had ONLY tomato recipes?
