How many of those recipes with tomato are for a seafood version of jambalaya? You cannot have a "Jambalaya" section in a cookbook and have 1 recipe. That doesnt make money.

If that were the case, this thread wouldn't be 7 pages long.


Not every famous chef makes every dish well. Besh's matzo ball soup at Luke, for example, is tasty, but the matzo ball is huge, dense and way too heavy. I don't thinks he's Jewish and I don't think he's Cajun, is he?

Nearly every cookbook has a section for gumbo and a section for jambalaya. You cannot have a section with just one recipe. Nearly all of those cookbooks also have one recipe that includes tomato for gumbo as well. That does not mean that all recipes are of equal value or that everyone in Louisiana enjoys tomato in their gumbo. You just wont sell many cookbooks with 10 recipes in it to cover the majority of cajun cooking.

I must have missed this part.. I live in the middle of Sicilian country, and we love our sicilian treats, BUT, I can tell him that our little neck of the woods does brown jambalaya, period..

I must have missed where having a recipe in a cookbook means that all recipes are used equally.

BTW you are aware that the presence of tomato in jambalaya doesnt necessarity make it a red jambalaya right?

Many recipes contain very small amounts of tomato paste or sauce as a browning agent much like Kitchen Bouquet is used (and also frowned on by many)

No. What he's saying is some of the most respected LA chefs and the most popular LA cookbooks use recipes for jambalaya with tomatoes. Which clearly makes it a VALID jambalaya recipe. Not very difficult logic to follow.

Doesn't mean they necessarily prefer tomatoes, just speaks to it's validity.

Just because you don't like it, or haven't seen it in your area, doesn't disqualify it as jambalaya.

I'm guessing it was done at least partly tongue in cheek (this isn't the OT).

I posted and but I certainly wasn't serious.

On the other hand, this whole Jambalaya stuff gets folks really riled up.

If the tomato based people would just admit they are wrong, it would all be good.
