What he's saying is some of the most respected LA chefs and the most popular LA cookbooks use recipes for jambalaya with tomatoes. Which clearly makes it a VALID jambalaya recipe. Not very difficult logic to follow.
Doesn't mean they necessarily prefer tomatoes, just speaks to it's validity.
Just because you don't like it, or haven't seen it in your area, doesn't disqualify it as jambalaya.

What's funny is that you don't get it. You're perpetuating this argument in your head and you don't even understand what has been pointed out over and over.
We accept your red rice jambalaya as jambalaya. But the only place in LA that really enjoys and cooks this dish is the NOLA area. Why is that so hard for you to understand?
These aren't facts in books. Nobody wrote a book about where to find cajun jambalaya and where to find creole(red) jambalaya. We(majority of this board) just know that it isn't the most popular type of jambalaya because we've cooked it/seen it cooked/eaten it hundreds of times all over the state.

I kinda agree with what you're saying except for this:
A LOT of posters refuse to recognize jambalaya with tomatoes as a valid jambalaya. Which is just plain wrong.

Because it's not traditional and that's been stated a dozen times.

False.
Go play in traffic...you're clueless.

I think it should be noted that jambalaya originated as "creole" jambalaya, and "cajun" jambalaya came later, so in actuality, the "cajun" jambalaya is the true imposter

Nobody is saying that Red Jambalaya is INVALID.
We are just saying that its just nasty..
Can this thread end now?
For every cookbook I can certainly point to recipes that do not taste very good. That does not mean they dont exist.

Who said either was an imposter?

I can see how this would keep one on edge.

FIFY
BTW you would have the same argument probably for using beans in chili in Texas. Doesnt mean I cant go to the store and find chili with beans in it. But for many Texas competitions beans are not allowed.

I'm going to reiterate my point for the 5th time because drama llama in here is going crazaaaay and say:
No one cares if you like/cook red jambalaya. My advice to the OP is that if he is cooking for CAJUNS who are brown jambalaya eaters ANNNDDDDD he clearly stated he's never cooked for them before and wants to impress them. AAANNNDDD he's stated he's never even made a jambalaya before.
Regardless of how long you people argue what's "real" jambalaya, when you cook for people (especially ones you've never cooked for before), you make something THEY will like and THEY are acquainted with.
If you want to bring out red jambalaya another time, go for it. But that's like if I was to invite a group of Livingston Parish trailer rats over and make Steak Tartare and Steamed Lobster and Braised Lamb.
You make what people will enjoy when you're trying to make a good impression :)

I swear, I will never understand why people get so heated about what other people do and do not like. Get upset if somebody won't TRY something? Sure. But after that, everybody's taste is different. I may agree or disagree but I'm not going to waste any time arguing about it.
Posted on 5/4/11 at 2:12 pm to LouisianaLady
LL, just to be fair, he never said he was cooking for Cajuns, you just made that assumption

I agree 100%. What got me pissed is when the OP was immediately told to get the frick out, when he was just looking for a recipe.
And LLady....go study!!
