I never use black pepper, but I'm not opposed to it. I use garlic powder when I season the chicken for frying if I'm doing the Paul Prudhomme version, but otherwise, I just use fresh garlic and put it in toward the end of simmering. I use cayenne if the andouille isn't spicy enough.

I'm conservative on salt until I taste after having added the andouille or sausage because both usually have plenty of salt and I use a lot of each.

I'm with KG, though. Good gumbo doesn't need to be barraged with a bunch of extra herbs and seasonings. It stands on its own.

I am a Okra guy as well, hell the dish was created around Okra. Hell, the name Gumbo is derived from the African name for Okra..........
