Oysters at Zuppardo's this weeks ad

I just checked the Zuppardo's ad and they have oysters by the gallon for $70.
I got one 3 weeks ago and they were beautiful oysters but are not kept in their own juices after opening per FDA regulations when for sale by container.
It is easy to remedy by just adding a bit of sea salt to the brine and giving it a good stir to mix it in after removing the oysters, then replacing the oysters to the container.
They are selling $70 per gallon, $36 per half gallon, $26 per quart and $14 per pint if interested in smaller quantities.

We got some about the same time and we did not like them (fried). Maybe the washing had something to do with it, but they had less flavor than others we had about a month before. Could have been a different brand even though both were bought at Zupp's

That is why I remove the oysters, let them drain and hit the brine they are in with a bit of dissolved sea salt to kick the salt level back up to where it should be because that water is bland.
I put the oysters back in the liquid and let them sit for a while and that seems to help with any bland flavor.
Personally, I prefer to open my own but I'm still in a walking boot from a recent ankle surgery and don't want that stench potential if it gets dirty opening oysters.
