I make quite a few different homemade mustards and use turmeric in a coupl of them. It is what make them yellow.

I've got an old game cookbook from the '70's that was published by L.L. Bean...lots of Northern recipes....lots of mace...very little pepper.

I think it goes back to Colonial New England cooking.
