My great-grandmother made roux with chicken fat.. My mom used the fat from some free range country chickens we got this past Thanksgiving and made poultry stock with the turkey carcass. Made one helluva chicken and sausage gumbo.

my go to lately have been a Roast in hte magnalite cooker. Stuffed with garlic and cook it low and slow to make a nice gravy. Big pot of rice and BAM!!

Chao ga(chicken congee) and suon kho(Vietnamese braised short ribs). I like making a spicy meatloaf too.
