the health dept. made most (i thought all but, according to this thread maybe not) stop producing it.

Yes they did....but it can still be found in the small towns with mom and pop stores...run by the Mayors father or private butcher shops.

man i haven't had some red boudin in years. My parents used to make it and I'd eat it on plain Lay's potato chips and it was actually quite tasty.
And yes, back then I knew exactly what was in it because I often watched my dad make it.

Haven't had it since I was a kid in Opelousas.
Always was told it was outlawed by the health dept.
But the other day I noticed the viet market by the house sells pig blood...
How would one be legal and not the other ?
