Bourgeois' in Schreiver still sells it... I bought some there last month. You can also find it at Cochon Butcher in New Orleans, and they serve it as an appetizer at Cafe Degas.

the health dept. made most (i thought all but, according to this thread maybe not) stop producing it.

Yes they did....but it can still be found in the small towns with mom and pop stores...run by the Mayors father or private butcher shops.

It is legal, but the inspector must be present when it is made, to make sure it is done properly.

I also highly recommend Saucier's Sausage Kitchen in Mamou - I have been there and he makes it the old-fashioned way. Very, very good.

man i haven't had some red boudin in years. My parents used to make it and I'd eat it on plain Lay's potato chips and it was actually quite tasty. And yes, back then I knew exactly what was in it because I often watched my dad make it.

Haven't had it since I was a kid in Opelousas.

Always was told it was outlawed by the health dept.


But the other day I noticed the viet market by the house sells pig blood...
How would one be legal and not the other ?
