Lately I've been giving the Strip prices the big middle finger and find myself in Chinatown with fantastic food at normal cost. I've done the high roller thing at Tom Colicchio's Kraftsteak, Spago, Joel Robuchon (rip) and other high end restaurants over the decades.

For Japanese fare, Izakaya-Go Less than one third of Strip prices.
German, Hofbrauhaus

The key is to find places off Strip. Think of it as getting away from Bourbon Street and finding gems around New Orleans. Vegas has lots of that to offer. Flock the Strip.

Seconding Mr. Mamas. About 2 miles off strip, but well worth it. Appears to be family run, and the chicken fried steak for breakfast makes it obvious that they've at least been to Texas! And for the half-dozen times we have been there for breakfast, we have never stood in a line. Never tried their lunch - but that's next time.

Guy Fieri's Flavortown makes a great lunch place. Their trashcan nachos are legit AF.
