Faux beam on kitchen/living LVL

We are building an open concept living/kitchen area with a 17’3’ opening between the two rooms. That span has an LVL for load bearing. Sheetrock guys are in the middle of floating this week and wife wants some sort of faux beam where the LVL is. Here is my question - I see some that are mitered at the joints and then just butt up to the sheet rock on the ends of the beam and slip right over the finished sheetrock. This sounds like the easiest way for sure but I want to do it right. I also see some that are embedded into the sheetrock. This definitely looks more natural. To achieve this embedded look, do I just use an oscillating tool to trace wood plank outline, take out sheetrock, and assemble the beam in place on the LVL? If I want to extend the beam sides into the wall a bit for a “header” look, any ideas how the hide the miter joint on the bottom of the side planks if they are thicker than the sheetrock?

Why did your finish carpenter not have this done before sheetrock finish?
Anything you do from this point on will look like an afterthought/add-on.
