What thickness plywood would you use in a metal shop building for walls?
On the far side there
ETA: Its been spray foamed

I would think that would depend on what you plan on doing on that side wall.
Are you going to add more wood framing before putting up the plywood?
Are you planning to hang cabinets or some type storage along that wall?
Anything hanging on that wall with weight and you'll either need more substructure or at least pretty thick plywood to handle a weight bearing load.
I did a couple walls in my shop with 7/16" OSB but my shop is conventional stick built and only one of those walls had anything hanging from it when I put up some pegboard to hang a bunch of hand tools.

I would do 3/4 T&G and never worry about what I wanted to do down the road.
