Because it's business, not a pissing contest.
Just tell the SEC to stick it? Fine, then we'd essentially forfeit the East to Florida.
It's partly about competitive balance. If they figure out a way to make this game work (whether it's on October 29th or the week after the regular season), and we decline, and it affects the result in the SEC East, that's somewhat of a black eye for our program.
Plus, it could be giving the same Florida team that fricked us a spot in Atlanta.
If the LSU/Florida game doesn't affect the SEC East/West race, then obviously I think we're all fine with it not being played. But that will be very hard to pull off, given the fact that both LSU and Florida (very likely Florida) could stay in their respective division races until the very end of the SEC schedule.
