I would rather a guy with the physical tools AND who did his work against the best athletes day in day out and on the sport’s biggest stage.
To follow that line of thinking you have to assume A) All players develop the same way in college and B) Because a guy didn't play against the best team in college it means that he isn't capable of doing it.
All things being equal I'd lean towards the P5 guy, but then you have to consider he probably played with a more talented supporting cast and possibly masked flaws.
I'd put more stock into the type of offense they ran (i.e. Is he looking to the sideline after every pre-snap read so the coaches can audible) than I would who he played against.
