One of my kids wants a mixer to make their own music for Christmas. Anyone have a recommendation for a DJ music creator / sound mixer for a very much beginner? I’d like to stay under $500.

Anyone on the music board makes their own beats and songs using a mixer?

Do they want a mixer to learn how to DJ with software like serato/recordbox or create music with software like ableton?
The tools for those two things are totally different.

I think creating music. Suggestions for that type of set up?

If it's creating music then ableton ($99 for the intro software) and something like a novation launch key (under $200) should put you well under your $500 budget.
To be honest, I'm more tuned into the DJ side of things and only have a cursory knowledge of sheer music creation. Ableton can do lots ot things, but it mostly EDM/Synth based. So anything that based in that would be good (Dance music to hip hop.) Things that are more human based like string instruments or horns can be done but there are better platforms for that type of stuff. I'd suggest a few youtube university classes on it.
Eta: they would also need a computer to run the software.
Eta2: if you have a guitar center local to you go and ask them.

Thanks. What are your recommendations if it’s for DJing?

To start off the Hercules DJControl Inpulse 300 MK2 or Pioneer DDJ-FLX4. Both should be around $250-$300.
I've only used Pioneer gear, but it's served me well for close to 10 years.
One word of "caution". The dj world has two basic ecosystems, Pioneer 's rekordbox and serato. Once you are in one, folks tend to stay in it. They do the same thing, but their layouts are a little different. The Pioneer will run both. The serato that comes with the Pioneer is the lite version. The full version is around $100, but is a lifetime license.

Get them a PreSonus ATOM controller if you have a computer. It comes with both Studio One Artist and Ableton Live Lite version. This thing integrates well with both and gives them really nice pads to trigger drum sounds in the software:
