I went several times as a kid. There is plenty to do. There are numerous touristy family fun centers all over that have mini golf and go karts. There are also plenty of shows to see.
I remember Silver Dollar City being pretty fun when I was a kid, but others that have been recently probably have a better opinion.

Driving or flying?
If driving.....
Here should be your plan of attack....
Cabela's in Rogers, AR
Payne Stewart Golf Club
Silver Dollar City
Bass Pro in Springfield and Branson
Tanger Outlet
Your wife will like that. Coach store, Nike Outlet, Polo Outlet, Oakley outlet, etc.
Billy Gail's Breakfast
You will thank me later, I promise.
Go Kart tracks out the ying yang
White Water Park

If you go in the summer there will be plenty of things to do, kid friendly, family friendly. We went one fall and we were literally 30 years younger than everyone we saw! The shows were meh - at best.

Have you ever been to Pigeon Forge? It's the same exact thing, minus Smokey Mountain National Park. Silver Dollar City is a legit park. Pretty much like Dollywood. Owned by the same people, I think. Otherwise, I hope you're a fan of go-carts and dinner shows.

FWIW, downtown Branson was nice. We were able to get away from all of the tourist traps on the last night of our stay and we really enjoyed it. Seemed to have more of the local crowd. The live music on the river was really nice
