Those get put in the special file. Then if challenged with why I didn't respond, I respond since my superior was cc'd I figured the two of them could handle it as I'm busy.

I make it a point to make these people look stupid in my reply.
Then I call my boss and we share a hearty laugh at how much of a bitch the person is.

I have a guy who when I give him a task, after he completes it, he'll respond to me and copy the principal on the account and go into a novel about how he took the initiative to complete this task in order to make everyone's jobs easier.
