I fry my temple meat on a very high fire but there is also close to a gallon of oil in the pot. That prevents the "seasoning" from burning off the pot. I have had success seasoning big pots with multiple thin coats of oil heated to the smoke point of that particular oil each time. Too much heat, especially focused on the bottom of the pot, and you will burn off the seasoning on the bottom.

Yes...a gallOn. I’m usually frying at least 30 lbs of temple meat, sometines more.
