OP, if you've never had Mickey Brown's burritos, go check Rouse's there for a sample. They're about $6 for a pack of three beef burritos, and are exactly the same as the one's you'll get from deer. If they have them in Thibodaux, and another grocer in Natchez has them, you should be able to find them in Kenner/Metarie Rouses. They're big and stuffed. Only thing is at this time of the year, the wait may be 6 weeks or more. I froze my meat and waited until August, and it took a week.I still have some left, so I'll do the same this year.

If anyone needs info about self-processing your deer, I found this website 10 years ago, and it is helpful for de-boning if you're not sure. It still takes me forever to get it done though.

You can, but to expedite the process I cover it with water then put about a cup of vinegar per 50lbs or so. Soak overnight then you're good to go.

I went to Begergon's last week. I had everything deboned. and I had 42 pounds of meat. No steaks are stew meat (took care of the backstrap and tenderloins myself). I got 60/40. 1/4 Fresh Jalepeno sausage, 1/2 Fresh Green Onion, and 1/4 Loose seasoned ground meat all vacuum sealed. I paid around $210 for 70lbs of meat. It was higher thank I expected, but it taste great.

I take my deer quartered to the processor and they handle it from there. Last doe I did half jalapeño sausage the other half hamburger meat with brisket instead of beef fat. I think my total was $105. The processor will let you pick and choose.

Are you talking about Dowling's? Those Mexicans and the 1 black guy are good with a knife. I always think it's kind of funny how they keep them tucked in their rubber boots.

I live in S. La but hunt in NELA. I laugh when I hear these guys soaking deer for days in an ice chest and then grinding it up into sausage. Everyone that has eaten some of my dry aged deer steaks from a NELA processor say it's the best deer they've ever tasted. I eat pork sausage from the grocery store and make steaks and hamburger meat with my deer. My family doesn't eat store bought hamburger meat because of Pink Slime.

The Dowlings are some of the nicest people you'll meet. When you brink kids in there, they always give them their choice of candy(M&M's, skittles, snickers) and .50 cents to get a coke out of the machine.

Our place is less than 5 minutes away which makes it damn convenient to drop a deer off and get back in the woods.

I asked the old man I visit, what do they do with all of the waste? He told me that they pile it up way back in the pasture and the coyotes take care of it. He told me that one time they tried to run over the bone yard with a bush hog, and ended up busting all of the tires on his tractor.

I live in N.O. and hunt in Bienville parish and Dowlings is where I go. Very rarely do my deer costs me over $150. If I get speciality items such as snack sticks then I expect it to be over $200.
