Ive done this before too but the force required to do it can dull a knife and increases the risk of cutting yourself.

I remember when a one of my cousins married a guy from Arkansas (good friend of mine now), he killed a deer on the club and immediately started to field dress it. Everyone looked at him like he was crazy when we weren't that far from the camp. Seems as though he was raised doing it at every kill and no one in our camp had ever field dressed one.
Personally, I prefer to clean a deer while it is hanging at the camp.

hanging them lets gravity help you for sure but for a tall guy cutting out the anus is more difficult in the air. I also hate having to chase a spinning carcass (especially when the only light is my headlights),so when I do hang them I usually leave the tip of the nose touching the ground.

Hang em up, skin them, cut the front shoulders off, pull the back straps out, make a small cut in the belly and pull the tenderloins out, cut the hind quarters off, dispose of the carcus with the guts

The only time I will gut a deer is if we are keeping the ribs to make crab bait.
