My iron pans are seasoned really well and I just wipe them out with a paper towel and they are good to go

I put a little water in it, put it on the stove I let it heat up, scrape the bulk of any burnt on junk up, pour out water, wipe dry with paper towel. Put a dab of cooking oil on it, spread it around, put it up.

Mine's pretty new. When I got it though it's a cheap one so it wasn't too smooth, I took a random orbit sander to the cooking surface and seasoned it outside on an open fire with lard. Worked like a charm.

It's not necessary but it's something my dad does whenever he gets a new black iron pot. A random orbit sander is just an electric sander that spins in a circle. Used for woodworking and whatnot. My dad just said that usually you wear down the cooking surface smooth over time through use, but he does that when it's new just to give it a head start and make it easier to clean.
