Sec. 26-5. - Stand hunting on or near property boundaries prohibited.
(a)The parish council declares and acknowledges that the placement of deer stands or stationary hunting locations or any type of shooting location or position, whether fixed, portable or mobile, on or near property boundary lines constitutes a safety hazard and may encourage over zealous hunters to encroach on the property rights of others by shooting or hunting deer or turkey on lands on which the shooter or hunter has no permission or authority to shoot or hunt. It is the intent of the parish council in enacting this section to promote public safety and protect private property against trespassing by prohibiting the placing of deer or turkey stands or hunting locations or any type of shooting location or position, whether fixed, portable or mobile, for the taking or hunting of deer or turkeys any closer to the boundary lines of adjoining properties than the distances specified in this section.(b)It shall be unlawful for any person, firm or corporation to assume a stationary hunting position or place a permanent or mobile hunting stand or any type of shooting location or position, whether fixed, portable or mobile, for purposes of the shooting or hunting of deer or turkey, any closer than 50 yards to the boundary of adjoining property or any closer than 100 yards to any residence or inhabited dwelling situated on adjoining property; provided, however, that under no circumstances shall the distance be any less than 50 yards from the adjoining property line.(c)If adjoining properties are separated by Alexander Creek, Big Bayou Sara, Little Bayou Sara, Thompsons Creek, East Fork of Thompsons Creek, Middle Fork of Thompsons Creek, and West Fork of Thompsons Creek, it shall be unlawful for any person, firm or corporation to assume a stationary hunting position or place a permanent or mobile hunting stand or any type of shooting location or position, whether fixed, portable or mobile, for purposes of the shooting or hunting of deer or turkey, any closer than 100 yards to the centerline of the creeks enumerated in this section.(d)This section shall not apply if adjoining landowners/lessees can reach a voluntary written agreement with respect to hunting or shooting on or near property boundaries, including the creeks enumerated in this section.(e)Whoever violates the provisions of this section shall be fined not more than $500.00, or imprisoned for not more than 91 days, or both.(f)Upon a second or subsequent conviction, regardless of whether the second offense occurred before or after the first conviction, the offender shall be imprisoned for not more than six months, or shall be fined not more than $500.00, or both, provided that any offense under this section committed more than five years prior to the commission of the crime for which the defendant is being tried shall not be considered in the assessment of penalties under this chapter.

Texas has some expensive/severe penalties for trespassing and shooting across property lines without permission.
Install at least 2 cameras one facing the property line and stand with the second facing entirely inside your property where you might suspect they might shoot. The idea is the get evidence of them crossing the property line to retrieve game.
If you do get evidence of them doing something illegal, contact the game warden in your county and show them what you have. As mentioned before it you will need to prove where the property line is.
